there exists: tofu chocolate mousse

Good-for-you dessert is real.

People always consider chocolate to be fattening, but the magic of high-quality dark chocolate is that a little goes a long way in flavor, and it’s high in antioxidant. Given the moderate portion control, it’s indeed healthy. With protein-packed tofu and mineral-loaded honey, this simple chilled dessert makes a happiness booster.

I used 100% unsweetened chocolate. Any good stuff with a cocoa content of 70% or above will work well.

Makes 2 servings

8 oz silken tofu
0.5 oz dark chocolate, melted in microwave or double-boiler and slightly cooled
1 tbsp unsweetened cocoa powder
4 tsp mild honey, more to taste
1/2 tsp vanilla or bourbon (optional)
chopped nuts for serving (optional)

In a food processor, purée the tofu, melted chocolate, cocoa powder, honey, and vanilla/bourbon, if using, until smooth. Evenly divide the mixture into two serving bowls. Cover and chill until firm. Serve cold with chopped nuts if required.
