The end of spring break. The beginning of another term.

A little sad, somewhat depressing, and mostly anxious–there are too many things going on at this moment. Before they get overly complex and messy, I need to refresh my mind.


no-cook cottage cheese salad
Makes 1 serving

1/2 cup cottage cheese
1 mini cucumber, cubed
a handful diced tomatoes
some good EVOO
black pepper

Place the cheese, cucumber, and tomato in a bowl. Drizzle on the oil and crack some black pepper on the top and serve.
