love is simple + sesame coconut granola
I’m back, as I promised, after my warlike finals.
The logic behind this 5-ingredient breakfast granola is from a poster: FOOD = LOVE. Love should be simple (in the average case), so true food may not be too complicated. Based on some unfounded analogy, my love affair to breakfast is simple too. If this makes no sense to you, just imagine the smell of toasted coconut and sesame seeds with a hint of honey in a rainy day.
sesame coconut granola
Makes about 4 cups
3 cups old-fashioned rolled oats
1/2 cup unsweetened shredded coconut
2 heaping tbsp honey
2 tbsp extra virgin olive oil
1/2 tsp vanilla
yogurt and fresh fruit for serving (optional)
Preheat the oven to 300F. Line a baking sheet with aluminum foil and lightly coat with cooking spray.
In a large bowl, add in all the ingredients. Use your hand to mix them together until well combined.
Transfer the mixture to the baking sheet. Bake about 30 minutes or until golden, stirring the mixture every 10 minutes. Keep an eye on it since it can be easily burnt. Let the granola cool completely before packaging.
