beyond the pops: coconut paleta frosty

Do you know what paleta is? Have you ever seen, and tried, those individual-packed pops in the neighborhood grocery store?

Unlike average ice cream, old-fashioned paletas are made without much air being churned in, and therefore, they are denser and creamier. If letting them sit in room temperature for a little while, you may find a gooey texture, which is similar to gelato and favored by both my mom and aunt.

Surprisingly, my coconut-lover cousin is not a big fan of paleta pops (I guess he is too lazy to hold the stick). However, he can hardly resist any type of shakes, smoothies, or frothy drinks, including today’s treat.

Makes 1 serving

1 coconut paleta pop (or 1/2 heaping cup coconut flavored ice cream), wooden stick removed
1/4 cup plain yogurt
1 tsp honey
1/4 tsp vanilla extract
2 ice cubes

crushed chocolate cookies for topping (optional)

In a blender, blend all the ingredients except the cookies together until smooth. Transfer the mixture to a serving cup and top with the cookie crumbs if needed.
