limited time only: grilled cheese with mozzarella, fig, and honey
There is always something that can only be found at a certain time of the year; for example, fresh figs.
I was supposed to pair figs with ricotta or feta cheese? It did not make sense to not try a new combination when I happened to have some great fresh mozzarella. And as my cousin said, it sounded bizarre but tasted good.
Who doesn’t like creamy cheese and juicy fruit?
grilled cheese with mozzarella, fig, and honey
Makes 1 sandwich
2 slices bread
1 oz fresh mozzarella, thinly sliced
1 fig, thinly sliced
1 tsp honey
2 tsp butter, softened and divided
Spread 1 tsp butter on one side of the bread slice, and repeat with the remaining slice. Drizzle the non-buttered side of one bread slice with honey. Layer the fig and mozzarella on it, then top with another bread slice, buttered side up.
Heat a small nonstick pan over medium-low heat. Place the sandwich in the pan and cook until golden brown, about 2 to 3 minutes. Gently press the sandwich down using a spatula. Check the bottom frequently to prevent burning. Carefully flip the sandwich and cook for another 2 to 3 minutes. Serve warm.
